Vegan Polenta Cakes with Tomato Basil Relish

Ingredients:

  • 2 cups cooked polenta, cooled and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Pan-fry polenta slices in olive oil until golden brown.
  2. Mix cherry tomatoes, basil, olive oil, salt, and pepper to make the relish.
  3. Top fried polenta cakes with tomato basil relish.
