Vegan Sweet Potato Gnocchi with Sage Butter

Ingredients:

  • 2 large sweet potatoes, roasted and mashed
  • 1 1/2 cups gluten-free flour
  • 1/4 cup olive oil
  • 1 tbsp chopped fresh sage
  • Salt to taste

Instructions:

  1. Combine mashed sweet potatoes with gluten-free flour and form into dough.
  2. Roll dough into ropes and cut into gnocchi pieces.
  3. Boil gnocchi until they float.
  4. Sauté in olive oil with sage for 2-3 minutes.
