Ingredients:
- 2 large sweet potatoes, roasted and mashed
- 1 1/2 cups gluten-free flour
- 1/4 cup olive oil
- 1 tbsp chopped fresh sage
- Salt to taste
Instructions:
- Combine mashed sweet potatoes with gluten-free flour and form into dough.
- Roll dough into ropes and cut into gnocchi pieces.
- Boil gnocchi until they float.
- Sauté in olive oil with sage for 2-3 minutes.
