Vegan Mushroom Stroganoff

Ingredients:

  • 2 cups sliced mushrooms
  • 1/2 cup cashew cream
  • 1/2 cup vegetable broth
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp Dijon mustard
  • 1 onion, diced
  • 2 garlic cloves, minced
  • Cooked pasta (gluten-free if needed)

Instructions:

  1. Sauté onions, garlic, and mushrooms until browned.
  2. Stir in soy sauce, vegetable broth, and Dijon mustard.
  3. Add cashew cream and simmer for 5 minutes.
  4. Serve over cooked pasta.
