Vegan Eggplant Involtini

Ingredients:

  • 2 large eggplants, sliced lengthwise
  • 1 cup vegan ricotta
  • 2 cups marinara sauce
  • 1/4 cup chopped basil
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Grill eggplant slices until tender.
  2. Spread vegan ricotta on each slice and roll them up.
  3. Place rolls in a baking dish with marinara sauce and bake at 375°F for 20 minutes.
