Vegan Jackfruit Tacos with Mango Salsa

Ingredients:

  • 1 can young jackfruit, drained and shredded
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1 ripe mango, diced
  • 1/4 cup red onion, diced
  • Juice of 1 lime
  • Corn tortillas

Instructions:

  1. Sauté shredded jackfruit in olive oil with paprika, cumin, and chili powder for 8-10 minutes.
  2. Mix mango, red onion, and lime juice in a bowl to make salsa.
  3. Serve jackfruit in corn tortillas topped with mango salsa.
