Ingredients:
- 1 can young jackfruit, drained and shredded
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 ripe mango, diced
- 1/4 cup red onion, diced
- Juice of 1 lime
- Corn tortillas
Instructions:
- Sauté shredded jackfruit in olive oil with paprika, cumin, and chili powder for 8-10 minutes.
- Mix mango, red onion, and lime juice in a bowl to make salsa.
- Serve jackfruit in corn tortillas topped with mango salsa.
