Vegan Cauliflower Tikka Masala

Ingredients:

  • 1 head cauliflower, chopped
  • 1 cup coconut milk
  • 1 cup tomato sauce
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil

Instructions:

  1. Sauté onion and garlic in olive oil until softened.
  2. Add cauliflower and spices, cooking for 5 minutes.
  3. Stir in tomato sauce and coconut milk, simmering for 15 minutes.
