Ingredients:
- 2 large eggplants, sliced lengthwise
- 1 cup vegan ricotta
- 2 cups marinara sauce
- 1/4 cup chopped basil
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Grill eggplant slices until tender.
- Spread vegan ricotta on each slice and roll them up.
- Place rolls in a baking dish with marinara sauce and bake at 375°F for 20 minutes.
