Ingredients:
- 2 cups cooked lentils
- 4 cups mashed potatoes
- 1 cup carrots, diced
- 1 cup peas
- 1 onion, diced
- 1 garlic clove, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Sauté onion, garlic, carrots, and peas in olive oil.
- Add cooked lentils and simmer for 5 minutes.
- Spread lentil mixture in a baking dish, top with mashed potatoes, and bake at 375°F for 20 minutes.
