Vegan Lentil Shepherd’s Pie

Ingredients:

  • 2 cups cooked lentils
  • 4 cups mashed potatoes
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Sauté onion, garlic, carrots, and peas in olive oil.
  2. Add cooked lentils and simmer for 5 minutes.
  3. Spread lentil mixture in a baking dish, top with mashed potatoes, and bake at 375°F for 20 minutes.
