Ingredients:
- 2 cups cooked polenta, cooled and sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Pan-fry polenta slices in olive oil until golden brown.
- Mix cherry tomatoes, basil, olive oil, salt, and pepper to make the relish.
- Top fried polenta cakes with tomato basil relish.
